Australian Wine Month: 5-course tasting menu and matching regional wines

Celebrate Australian Wine Month with our 5-course tasting menu and matching regional wines.

Each dish takes influence from a different Australian wine region and is carefully paired with a wine from the same space.

The menu starts in Tasmania, heads towards NSW, South Australia and Western Australia and finishes up in Victoria.

Course 1 – Tasmania
Raw scallop, abalone in Kombu stock, seaweed powder, fried sea parsley, bay leaf oil

Course 2 – New South Wales
Quail, turnip, mushroom
Wine match: 2016 Semillon, A. Thomas Breamore

Course 3 – South Australia
Kingfish, cauliflower, steamed mussels, sea herbs
Wine match: 2016 Chardonnay, Edelderton Eden, Eden V. SA

Course 4 – Western Australia
Venison, parsnip, munthari, wattleseed
Wine Match: 2013 Cabernet Sauvignon, Prodigal Son, Margaret River WA

Course 5 – Victoria
Cherry and riberry soufflé, rhubarb and tonka bean icecream
Wine Match: 2017 Moscato, All Saint, Rutherglen VIC
